Summary
The prep associate prepares recipes and ingredients used to create la Madeleine signature food. Maintaining the highest standards of food quality and food safety is at the foremost importance of this position. Prep functions include cutting, chopping, mixing, weighing, baking, pastry preparation, and various other tasks related to food production. 100% compliance to food safety standards, recipes and procedures is essential. Prep associates prepare quantities of food as dictated by management.
Essential Duties and Responsibilities
- Performs all duties and responsibilities in a timely and effective manner in accordance with established company policies to achieve the overall objectives of the position.
- Must perform multiple tasks while maintaining required standards of operation in daily restaurant activities.
- Must be able to perform duties to ensure guest satisfaction.
- Produce all items 100% to recipe specifications within the standard cook or preparation time frames to ensure guest satisfaction and control food cost. Follow the procedure for recipe execution as stated in the la Madeleine Operations Manual.
- Ensure that all foods used in preparation meets la Madeleine specifications for quality, shelf life and brand.
- Keep updated and knowledgeable on recipe changes. Utilize the most updated recipes as dictated by management.
- Keep all food, prepared and received, in proper rotation.
- Communicate with management throughout the shift regarding product issues, such as “shortages” and “outs” and product par levels.
- Communicate hazards or issues with equipment, tools, etc. to management.
- Complete assigned prep work and stock station according to posted par levels.
- Maintain and operate equipment properly.
- Clean and sanitize workstation, utensils and equipment throughout the day. Break down and clean station thoroughly every day. Always work clean, following la Madeleine Food Handling Procedures.
- Perform assigned daily and weekly cleaning duties as assigned by management.
- Assists with putting product orders away and organizing storage and walk-ins.
- Assists with sauté, sandwich and other front line associates as needed.
- Perform other duties and responsibilities as requested.
Qualification Standards
- Must understand written and verbal café safety and security policies and procedures.
- Able to clearly understand, communicate and interact with associate and management teams.
- Works frequently in hot, cold and damp environments.
- Stands/works/moves during entire shift with frequent bending and stooping. Lifts and carries sacks and cases of up to 45 lbs., up to 20 times per shift; places these items on high shelves and walk-in freezer.
- Hazards include but are not limited to broken glass and metal cans, burns, slipping and tripping.
- Able to work with different types of kitchen equipment including, but not limited to: convection ovens, open flame burners, knives, cutting boards, slicing machines, mixers and soup kettles.
- Able to read menu items, recipes and handwritten orders.
- Able to hear orders from kitchen, cashiers, managers, and/or guests in the midst of loud background noises.
- Able to pass recipe and food quality tests as required.
Educational Requirements
- High school diploma or GED equivalent preferred.
